The Times We Cherish
Some of my fondest memories with my husband come from those times when money was really tight, and we had to become creative with our dining and entertainment. Having PB&J for dinner or pancakes, which is really a lot more fun than you would think. Of course with meals like that, you can't eat them at the table. You eat them on the floor in front of the tv, which adds ambiance to the meal.

It's amazing how far you can make a dollar stretch when you need to, and how creative you can get moving finances around to find those dollars so you can stretch them. Sometimes it simply came down to collecting up all the change jars in the house and heading to the nearest coinstar machine.

Even though we were dirt broke, and scraping change together so we could have syrup on those pancakes, those were good times. Good times indeed.

Not that they're necessarily the times I cherish, but they were definitely the times I remember well. I don't recall all the good dinners we ate, but I remember eating cream of wheat cake every night for a week.

I also remember coming home to a fabulous dinner smell, only to find out that the "good" dinner was going to some lady that just got out of the hospital and we were having peanut butter and jelly for dinner. It was so dissapointing.
